MEXICAN Ancho or Poblano Chile Peppers: Pronounced AHN-choh. A dried deep reddish brown chile pepper about 3 inches wide and 4 inches long with a sweet hot flavor. When fresh they are referred to as poblanos. They look like small bell peppers. Anchos are flat, wrinkled, and heart shaped. They range in color from very dark red to almost black. Anchos are mild to moderately hot and often soaked and ground for use in sauces

Ancho chile powder is made by grinding ripe poblano chile peppers that have been air dried. This creates a chile powder that is mild in heat, but rich in all those wonderful chile flavors! Our ancho chile powder has that distinct chile flavor with nice fruity hints without all the heat found in most chile powders.

Ancho Rellenos is a simple, but delicious dish that can be so much more than a poblano or ancho chile pepper stuffed with melting cheese. Anchos Rellenos can be baked as wells as lightly battered and fried. The fillings in these stuffed pepper can be varied widely and doesn't even need to include cheese. Try filling them with a mixture of sautéed potatoes and spicy chorizo sausage, or browned pork simmered in a hardy tomato sauce, or even chicken and mushrooms in a creamy sauce. The possibilities are really endless.
